Oatmeal Brownies

Ingredients (Crust)
- 2 1/2 c. Quaker oats
- 3/4 c. all purpose flour
- 3/4 c. dark brown sugar
- 1/2 tsp. baking soda
- 3/4 c. butter, melted
Ingredients (Brownies)
- 4 sq. (1 oz. each) unsweetened chocolate
- 2/3 c. shortening
- 1 1/4 c. flour
- 2 c. sugar
- 4 eggs
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. salt
Equipment
- 13 x 9 x 2 glass baking pan
- Small sauce pan
Preparation (Crust)
- Heat oven to 350 degrees.
- Grease 13 x 9 x 2 inch pan.
- Melt butter in sauce pan
- Mix oats, flour, brown sugar and soda; stir in butter.
- Reserve 3/4 cup of oatmeal mixture.
- Press remaining in pan (grease hands with shortening to prevent sticking).
- Bake 10 minutes, cool 5 minutes.
Preparation (Brownies)
- Heat chocolate with shortening until melted.
- Stir in sugar, eggs and vanilla.
- Mix in flour, baking powder, salt.
- Spread over oatmeal crust.
- Sprinkle with reserved oatmeal mixture.
- Bake until brownies begin to pull away from sides of pan, about 35 minutes.
