Oatmeal Brownies

Ingredients (Crust)

  • 2 1/2 c. Quaker oats
  • 3/4 c. all purpose flour
  • 3/4 c. dark brown sugar
  • 1/2 tsp. baking soda
  • 3/4 c. butter, melted

Ingredients (Brownies)

  • 4 sq. (1 oz. each) unsweetened chocolate
  • 2/3 c. shortening
  • 1 1/4 c. flour
  • 2 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1 tsp. salt

Equipment

  • 13 x 9 x 2 glass baking pan
  • Small sauce pan

Preparation (Crust)

  1. Heat oven to 350 degrees.
  2. Grease 13 x 9 x 2 inch pan.
  3. Melt butter in sauce pan
  4. Mix oats, flour, brown sugar and soda; stir in butter.
  5. Reserve 3/4 cup of oatmeal mixture.
  6. Press remaining in pan (grease hands with shortening to prevent sticking).
  7. Bake 10 minutes, cool 5 minutes.

Preparation (Brownies)

  1. Heat chocolate with shortening until melted.
  2. Stir in sugar, eggs and vanilla.
  3. Mix in flour, baking powder, salt.
  4. Spread over oatmeal crust.
  5. Sprinkle with reserved oatmeal mixture.
  6. Bake until brownies begin to pull away from sides of pan, about 35 minutes.
